Physical quantity is the on-hand balance, reserved quantity belongs to undelivered orders, and available quantity equals physical minus reserved and is what can be sold. When stock tracking is enabled, quantity is reserved at order creation, deducted at delivery, and released on cancellation, and reserving orders can be reviewed from the reserved-orders dialog.
