Does Vareons create customer profiles automatically from orders?

Vareons links every order to the customer profile through the customer id, so the order appears in the profile's orders tab alongside the activity log. Purchase history can later be synced to refresh the statistics from the actual orders. See the CRM documentation, customer order history, and customer lifetime value.
